It’s Cinco De Mayo AND Taco Tuesday! What are the odds? Your fiesta may look a little different this year but you can still celebrate! Turn on some mariachi music and make these crunchy tacos cups recipe at home!
Tacos are one of my favorite food to eat – there are many ways to mix and match the flavor and they are totally delicious! These taco cups are a fun to make, a perfect appetizer and great for parties as well. I used layered wanton wrappers instead of tortillas with meat, diced tomatoes, sour cream, cilantro on top and baked to crispy perfection!
2 tsp of olive oil
4 cloves garlic
1/2 an onion
1 lb ground beef
2 tbsp taco seasoning (you can use whatever is available)
1 1/2 ounce diced tomatoes
1 tomato (cut into small pcs)
Salt and pepper to taste
Cilantro cooking spray
Preheat the oven to 400 degrees Fahrenheit.
Heat the olive oil in the large pan.
Sautee garlic and onion.
Add the beef to the pan, stirring constantly.
Add the taco seasoning, salt and pepper to taste.
Cook the meat for 10 mins or until cooked through.
Stir in diced tomatoes and wait for 2 mins.
Coat the muffin baking pan with cooking spray
Place 2 wanton wrappers into the bottom of each muffin baking pan.
Spoon approx 2 tbsp of meat into each cup and top with cheese.
Bake for 15-20 mins or until browned and cheese is melted.
Top each taco cup with sour cream, cilantro and tomato.
Serve and enjoy!
