
This easy and quick recipe is a perfect twist of the traditional cookies. It’s the best combination between refreshing matcha, flavorful cookies and chewy mochi filling. The whole process takes only around 1 hr including the baking time! Only 2 of these cookies and a coffee are enough to make you feel full the whole morning!
Ingredients:
FOR THE DOUGH:
- 120g all purpose flour
- 70g unsalted butter (softened)
- 70g sugar
- 10g matcha powder
- 1 medium size egg
FOR THE MOCHI FILLING:
- 45g glutinous rice flour
- 20g corn starch
- 70ml 0% milk
- 1 tsp vegetable oil
Instructions:
FOR THE DOUGH:
- In a bowl,mix the butter and sugar together.
- Gently whisk the egg in until they are combined. (Do not over mix it)
- Sift flour, matcha powder, baking powder into a separate bowl.
- Divide the flour mix in 3 portions and mix them into the egg mixture, one portion at a time.
- Gently mix until they are combined.
- Cover it with cling wrap.
- Chill the dough for 20 mins.
FOR THE MOCHI FILLING:
- Whisk all mochi filling ingredients together (except for the vegetable oil) until they are combined.
- Steam the mixture in a pot for 20 mins.
- Stir continuously.
- Mix oil in the mixture while it is still hot.
- Set it aside to cool.
- Cover the mixture with cling wrap so it won’t dry out.
FOR BAKING:
- Pre-heat the oven at 170°C.
- Prepare 2 baking trays lined up with parchment papers.
- Roll 20g of dough into small balls.
- Flatten the middle of the balls with your palm.
- Repeat with the rest of the dough.
- Roll 8g of mochi mix into small balls and slightly flatten them.
- Repeat with the rest of the mochi mix.
- Place each mochi ball in the middle of the dough.
- Roll them until the dough entirely covers the mochi filling.
- Flatten them again using your palm and place on the baking trays.
- Bake for 12 minutes.
- Remove them from the oven and let them cool down on the cooling rack.
- SERVE AND ENJOY!
PS: You can add chocolate chips too! Mochi, chocolate and matcha are basically every Asian dessert we love rolled into one!
