NO-CHEESE SPICY CAJUN PIZZA RECIPE

So if you’re the rare breed of people who doesn’t like cheese, yes I said DOESN’T LIKE CHEESE… there’s no reason why you shouldn’t indulged in a customized pizza made just to your liking! In this no cheese pizza recipe, we made the spicy tomato base from scratch and marinated the chicken with spicy Cajun powder. There’s no such thing as too much spice… right ?

Ingredients:

FOR THE DOUGH:

  • 2 cups bread flour
  • 2 1/4 teaspoon yeast
  • 1 1/2 teaspoon sugar
  • 3/4 teaspoon salt
  • Cajun powder
  • 2 tablespoon olive oil
  • 175 ml warm water

FOR THE TOMATO BASE:

  • 2 tbs can tomato
  • 1 tbs chili sauce
  • 1 tsp Italian herbs
  • Salt and pepper

FOR THE CHICKEN MARINATE:

  • Salt
  • Pepper
  • Cajun powder

FOR THE TOPPINGS:

  • Chicken fillet
  • Red/Yellow/Green Capsicum
  • Onion
  • Mushroom

Instructions:

FOR THE TOMATO BASE SAUCE:

  • Add in 2 tablespoons of canned tomatoes into a small bowl.
  • Mix in your choice of chili sauce.
  • Add in Italian herbs or any choice of herbs that you have available.
  • Add salt and pepper for seasoning.
  • Mix all ingredients well and set aside.

FOR THE CHICKEN MARINATE:

  • Slice your chicken fillet into slices.
  • Marinate chicken well with salt, pepper and Cajun powder.

FOR THE TOPPINGS:

  • Slice your mushroom, capsicum and onions.

FOR THE DOUGH:

  • Combine 1 cup of flour, yeast,sugar,salt and Cajun powder in a large bowl.
  • Add olive oil and warm water.
  • Use a wooden spoon to mix.
  • Gradually add 1 cup of flour, stirring until the dough is forming into a cohesive, elastic ball and is beginning to pull away from the sides of the bowl.
  • The dough will still be slightly sticky but still should be manageable with your hands.
  • Drizzle some olive oil in a separate large bowl. Brush the sides of the bowl with the oil.
  • Lightly dust your hands with flour and form your pizza dough into a round ball and transfer to your olive-oil brushed bowl.
  • Use your hands to roll the pizza dough along the inside of the bowl until it is coated in olive oil.
  • Cover the bowl with a plastic wrap and place it in a warm place.
  • Allow dough to rise for 30 mins.
  • Preheat oven to 220°C.
  • Once the dough has risen, use your hands to gently deflate it and transfer to a lightly floured surface and knead briefly until smooth.
  • Use a rolling pin to work the dough into a circle.
  • Transfer dough to a parchment paper lined pizza pan and fold the edges over to form a crust.
  • Drizzle additional olive oil over the top of the pizza and use a pastry brush to brush the entire surface of the pizza with olive oil.
  • Use a fork to poke holes all over the center of the pizza to keep the dough from bubbling up in the oven.
  • Spread your tomato base sauce on the dough with a spoon.
  • Add the toppings and bake for about 20 mins or until toppings are golden brown.
  • SLICE, SERVE & ENJOY!
